Crust:
1 cup of softened butter
½ cup confectioners' sugar
2 cups all-purpose flour
Pinch of salt
Filling:
4 eggs
2 cups sugar
5 tablespoons all-purpose flour
Pinch of salt
6 tablespoons freshly squeezed lemon juice
1 to 2 tablespoons grated lemon rind
Glaze:
2 cups confectioners sugar
1 tablespoon soft butter
Pinch of salt
3 tablespoons lemon juice
Preheat oven to 325 degrees F
For the crust, mix butter, sugar, flour, and salt in a food processor
until blended. Pat evenly into the bottom of a lightly greased 13x9x2-inch
pan. Bake for 15 to 20 minutes or until puffed and very lightly
browned. Remove from the oven and turn the oven up to 350 degrees.
For the filling, in the same bowl, mix eggs and sugar together.
In a separate bowl, sift flour and salt; add to egg mixture and
mix well. Add lemon juice and rind. Pour over crust; bake 15 to
20 minutes at 350. Remove from the oven.
For the glaze, combine confectioners' sugar, butter, salt, and
lemon juice in a processor bowl. Spread evenly over filling. Cool.
Cut into 3-inch squares.
